Vegetable & Bacon Fitters are such a quick throw together for lunch in cold OR warm weather. Serve by themselves, with a side of salad, rice, sour cream or tomato sauce. Use a knife and fork or eat them with your hands, anything goes!
Ingredients: Makes 12 - 16
- 8 x Slices Of Rindless Short Cut Bacon
- 1 x Small Onion Diced
- 2 x Cups Of Grated Zucchini
- 2 x Cups Of Grated Carrott
- 2 x Cups Of Grated Potato
- 3 x Large Eggs
- 1 x Cup Of Flour
- Oil For Pan Frying
- A 1/4 Cup Measuring Cup
Method:
1. Cover a pan with oil up to 1cm deep and start heating on a medium heat.
2. Dice your rindless short cut bacon and put aside.
3. Grate all of your vegetables and place in a large mixing bowl along with the bacon. Mix well with a wooden spoon.
3. Using a 1/4 measuring cup, scoop dollops of mixture into your hot pan. As you do press lightly on each to flatten out the mixture a little. This will ensure it cooks through well.
4. When you think your underside is a golden brown flip and cook the other side. Once cooked on both sides, take out of the pan and lay on paper towel to drain excess oil.
Serve by themselves or with a side of rice or salad. Sour cream or even tomato sauce goes great with this item.
Tip – To freeze either freeze separate first on a baking tray then place in sealed containers or zip lock bags. If you don't have the space to freeze like this, you can stack them with baking paper between each so they do not stick together and put straight into your container/ziplock bags.
