Tzatziki Greek Lamb & Salad is one of my favorite dishes to make and of coarse eat! I often ordered when out for a meal so I started making it at home and its divine!

Ingredients: Serves 2

  • 500g Of Lamb Sizzle Steak 
  • 1 x Tablespoons Of Vinegar
  • 1 x Tablespoons Of Lemon Juice (fresh from a lemon)
  • 1 x Teaspoons Of Rosemary 
  • 200g Tzatziki Dip 
  • 1 x Tablespoon Of Olive Oil 
  • 1 x Tablespoon Of Balsamic Vinegar
  • 200g Pitted Black Olives 
  • 200g Greek Feta Cheese
  • 1 x Small Red Onion
  • 2 x Lebanese Cucumbers
  • 200g x Cherry Tomatoes 
  • Pinch Of Salt

 

 

Method:

1. In a bowl mix together the vinegar, lemon juice, salt & rosemary. Slice the lamb into strips and place into your bowl coating well. Cover with cling wrap and leave to marinate in the fridge whilst you make your salad. 

 

2.To make salad dressing Whisk with a fork the olive oil and balsamic vinegar. Set aside. Dice the red onion and cucumber. Place into a serving bowl. Add your tomato and olives. Pour dressing over top. Gently mix with a large spoon. Lastly add your feta on top. Cover and place in the fridge for serving. 

 

3. Heat a non stick pan (if you do not have non stick spray with some oil). Pour your lamb mix into the hot pan. Cover with lid and cook on a medium heat, turning occasionally until done to your liking.

Serve with a side of tzatziki and Greek salad you prepared earlier. 

 

Tip: You can prepare the lamb ahead of time in bulk. Prepare as per step 1 doubling /tripling the ingredients for a bulk batch. Break down and store in ziplock bags in the freezer. Be sure to distribute any liquid evenly. When wanting to prepare take out to defrost in the fridge a few hours prior before cooking.
