
We LLLOOOVVVVEEEE Taco night here in this house! This recipe is fabulous for something different to your normal Taco's. Its a great dish regardless of if you like it with chicken or mince.
Ingredients:
- 500g x Taco mince already made up (I like to make mine up using Old El Paso Taco spice + onion, zucchini, capsicum & carrot)
- Original Plain Corn Chips
- Taco Sauce
- Cherry Tomatoes
- Cucumber
- Capsicum
- Avocado
- Sour Cream
- Grated Cheese
- Fresh Crisp Iceberg Lettuce
- Medium Size Casserole Dish
Method :
1. Preheat the oven to 180c.2. In a casserole dish spread out a good amount of corn chips an inch high and all the way to the edges. Top with taco mince, then taco sauce, sour cream mashed or sliced (whichever you prefer) avocado, sliced capsicum, cherry tomatoes halved then finally grated cheese on top.
3. Cook for 5-10 minutes until the cheese has melted. Top with grated carrot and sliced cucumber.
Serve your desired amount on a bed of fresh crisp iceberg lettuce.
