Did you like the simple Vegetable Soup recipe? If you did, then I'm sure you will love this simple Pumpkin Soup too! You can make it as thick as you wish (we like it a little thicker) or as thin - just add a bit more stock in to thin it out. Its great for a quick go lunch in your fridge for the week :)
Ingredients: Serves 4-6
- 2 x Kent Pumpkins (or another of your choice)
- 2 x Large Potatoes
- 3 x Medium Carrots
- 500 - 750mls (2-3 cups) of Vegetable Stock
- 1/4 Teaspoon Of Nutmeg
- 1 Teaspoon Of Vegeta
- Pinch Of Pepper
- Sour / Normal Cream on top if you wish when serving.
- Large Stock/Soup Pot
Method:
1. Peel, deseed & cube your pumpkin, potato and carrots.
2. Place in a large pot and fill with water to boil enough until your vegetables are soft enough to mash.
3. Once vegetables are soft enough to mash really well, drain water and then use a potato mashers to mash all together well. Try and get it as smooth as possible.
4. Add your vegetable stock, nutmeg, Vegeta and pinch of pepper. Mix together well with an electric mixer to smooth your mixture further.
5. Return to your stove top and keep on a simmer - medium heat stirring occasionally for 15-20 minutes.
6. Serve as is or with a dollop of cream or sour cream on top.
Tip – Make this at the start of your week and it is good to stay in your fridge in a sealed container for 3-4 days, making it easy to take out as much as you want for lunch over a few days.
