As a kid in summer we had a lot of bbq's with friends and that ment yummy bbq meats and delicious salads! My all time favorite was a classic potato salad my mum made. It was so so so so yummy! This is my own take on the classic with the added tastiness of grain mustard and bacon pieces. Its so simple and so yummy you will use it all summer as your go to! - see one of my salad batch preparation vlogs here soon.

Ingredients: Serves 8 - 10

  • 1kg Potatoes
  • 250g Of Short Cut Bacon
  • 2 - 3 Spring Onions (approx 20cm long)
  • 1 x Cup Of Whole Egg Mayonnaise 
  • 1/2 x Cup Of Sour Cream
  • 1 x Tablespoon Of Grain Mustard
  • Pinch Of Salt & Pepper 

 

Method:

1. Wash, peel and dice your potatoes at least 3cm in size. Too small and they will be too mushy when cooked, so keep them at a good size. Put in a pot of water and bring to the boil. Cook  until you can put a fork in easily but not too cooked that it will go mushy. Once cooked drain and put in the fridge to cool down completely before adding all of the next ingredients.

 

2. Dice your spring onion and put aside for the next step. 


3. In another bowl whisk together your mayonnaise, sour cream, grain mustard, salt & pepper. Keep aside a small amount of spring onion for topping and stir through the rest into this dressing. Place the dressing into the fridge while your potatoes are cooling. This will also help thicken it a little.


4. Whilst your potatoes are cooling dice your bacon and cook up in a pan until crispy.


5. Add your dressing and bacon to your cooled potatoes stirring through gently. Put into a serving dish and top with the remainder of your spring onion.

Serve with other salads and meat of your choice.
