When deciding on the first recipe to share on the VIP Lounge I couldn't see anything but this special spaghetti bolognaise I make for my son Joseph. It is his favorite meal ever and I love surprising him with it after a long week of school.

 

Ingredients:  Serves 4-8 (I always have enough bolognaise to freeze for another meal as a family of 4)

  • 500g Beef Mince
  • 1 x 400g Tin Of Diced or Crushed Tomatoes
  • 1 x Medium Onion
  • 1 Cup Of Grated Zucchini
  • 1 Cup Of Grated Carrot
  • 1 x Green Capsicum Diced
  • 1 Teaspoon Of Mixed Dried Herbs
  • ½ Cup Of Tomato Sauce
  • 1 x 90g Tin Of Tomato Paste
  • Salt & Pepper
  • Pasta – the type and amount you normally would need for your family.
  • Cheese – your choice to top (I mix between tasty grated, feta & parmesan).

 

Method:

1. Brown onion in a pan. Instead of using oil just add a small amount of water for a healthier option.
    2. Whilst your mince is cooking dice your onion and capsicum. Grate your carrot and zucchini.
      3. When your mince is cooked (brown), drain any excess water and stir in all your prepared vegetables, diced tomatoes, tomato paste and tomato sauce.
        4. Add you mixed dried herbs, salt and pepper to taste stirring on a medium heat for 5 minutes.
          5. Reduce to a low heat and simmer for 20-30 minutes stirring occasionally.
            6. Whilst bolognaise is simmering cook your pasta. Once pasta is cooked dish pasta up immediately to avoid sticking, topping with bolognaise and your choice of cheese.

               

              TIP - Freeze any extra bolognaise you have for another dinner. You can also double the recipe to batch cook and freeze anything you won’t be using for future meals to save you time in the future. Remember plan ahead with Meal Planning!
