This low carb Bacon Bread is a great breakfast dish that you can prepare the night before, then let your kids (with Dads assistance) serve it to you in the morning toasted with bacon, eggs and avocado.Will also make a lovely brunch or lunch dish. Bake it and take it with you to your Mum's,Grandmas or Aunts. It will make a lovely accompaniment to a cup of coffee or pot of tea.Or simply by itself with lashings of butter.
Ingredients: Serves 12
Bread
- 3 cups almond flour
- 3 tbsp psyllium husk
- 3 tsp baking powder
- 6 large eggs
- 3 tbsp nutritional yeast
- 1 tsp garlic granules
- 3 tsp onion flakes
- salt & pepper to taste
- 8 rashers of bacon (chopped)
- 1 cup almond milk (or milk of choice)
Toppings
- 1 tbsp sesame seeds
- 1/4 cup grated cheese (can omit, to be dairy-free)
Method:
1. Pre-heat oven to 180 degrees Celsius. Prepare a bread loaf tin, lining it with non-stick baking paper.
2. Add all dry ingredients in a food processor, blitz a couple of times until well combined. Transfer to a large bowl.
3. In a separate bowl, with an electric mixer, beat eggs until light and fluffy.
4. Add dry ingredients to eggs and fold in with a silicone spatula. Add in milk and bacon, fold in until well combined.
5. Pour into loaf tin and sprinkle with topping ingredients. Place into pre-heated oven for 35-40 min.
Store in an air-tight container in the fridge for up to 5 days.
