This Lamb Chops With Red Wine Sauce recipe is a great simple way to do something different with such a simple meat. Quick and easy it is great for a busy day when you don't want anything too complicated and super when freezing for later.
Ingredients: Serves 4
- 1kg Lamb Chops
- 3 x Medium Carrots
- 2 x Sticks Of Celery
- 400d Tin Of Crushed Tomatoes
- 2 x Tablespoons Of Tomato Paste
- 1/2 Teaspoon Of Rosemary
- 1 x Cup Of Red Wine
- Pinch Of Salt & Pepper
Method:
1. In a large pan brown your lamb chops in approx 1 cm of water on a medium heat. Once both sides are browned turn off heat and drain any excess water. Keep on the pan for the next steps.
2. Whilst your lamb chops are browning start preparing your vegetables. Peel your carrots and cut into sticks. Dice your onion & celery. Place all in a bowl and set aside.
3. In another bowl mix together your red wine, crushed tomatoes, tomato paste, rosemary and salt/pepper. Pour over your vegetables and combine with a wooden spoon.
4. Pour your vegetables and red wine sauce over your lamb chops and gently flip with a spatular to coat well.
5. Place on a high for 10 minutes cooking with a lid on. Then reduce to a medium heat with lid off for 30 minutes flipping with a spatular every 10 minutes to ensure nothing sticks. Lastly place the lid on again and reduce to a simmer for 10 minutes.
6. Dish is cooked when your carrots are soft and your sauce has thickened.
Tip – When freezing this dish place your chops into your container first and then cover with your sauce well. This will work best when reheating.
