Kebabs are a favorite in summer, but its also nice to have these as a simple dinner in winter with some steamed rice. This Honey Soy & Garlic Chicken Kebab recipe is easy to throw together, versatile and simply delicious!
Ingredients: Makes 12+
- 1kg Chicken Breast Chunks
- 1/2 Cup Of Soy Sauce
- 1/2 Cup Of Honey
- 2 x Tablespoons Lemon Juice
- 1 x Teaspoon Of Minced Garlic
- Your Choice Of Vegetables/Fruit Cut Chunky (We like to use onion, pineapple, capsicum, mushroom & zucchini).
- Skewer Sticks
* Note - If you are using wooden skewers be sure to soak them in water for 20 minutes before using to avoid burning if cooking on a BBQ or similar flame.
Method:
1. Prepare your meat - If not precut, cut your chicken breasts into chunky cuts. Remove any excess skin they may have.
2. Prepare your marinate - In a bowl whisk together your soy sauce, honey, lemon juice & minced garlic. Pour over your chicken chunks in a sealed container and refrigerate for 3-5 hours.
3. Prepare your vegetables - When your ready to start making your kebabs chunky cut any vegetables you would like on your skewers. We like to use onion, pineapple, capsicum, mushroom & zucchini.
4. When ingredients are ready to put together pre heat your pan or bbq.
5. Skewer your marinated chicken and vegetables. Place in your pan/bbq and cook on a medium heat to ensure not burning, turning occasionally until chicken is cooked through. In a pan it will help if you have a lid to place on top. Remove the lid for the last 5 or so minutes.
Serve with your choice of garden salad and steamed rice.
Tip – To freeze any kebabs you will not be eating, make up kebabs and place into either a sealed container or zip lock bag for the freezer.
