This Bacon Carbonara recipe is one of those quickly made up batch items. It's super for us on a Friday night at the end of a busy tiring week . . . and the best thing is the KIDS LOVE!

 

Ingredients: Makes 12

  • 2 x Puff Pastry Sheets
  • 800g Pineapple Pieces (2 tins)
  • 250g Of Shaved Ham
  • Pizza Base Sauce
  • 1-2 Cups Of Shredded Cheese
  • 1 x Tabelspoon Of Freshly Chopped Parsley
  • 2 x Tablespoons Of Butter/Margarine
  • 1 x Tabelspoon Of Margarine/Butter for brushing

 

Method: - warning it can be quiet messy lol.

1. Preheat your over to 220c. Take out your puff pastry sheets to defrost if frozen.

2. Prepare ham and pineapple. Ham needs to be cut down a little smaller than you would have from the deli. Your pineapple pieces if very large should be cut in half. You also want to make sure that you drain any excess juice and then also press with paper towel to really drain it, otherwise it will make your pastry really soggy.
 
3. When your pastry is thawed enough, separate (still keeping at least one paper sheet attached on the bottom side) and evenly cover 2 pastry sheets with your pizza base sauce - its a good idea to only go to approx 1cm from the edge to ensure it doesn't spill out.
 
4. Next spread your ham and pineapple on top of your pizza sauce.
 
5. Start carefully rolling up your pizza's. You will need to keep an eye on the ends to ensure things do not fall out. Your pastry could tear so be careful. If you get too big of a tear just add another pastry sheet to the outside.
 
6. Once rolled up cut in half and then keep cutting 2cm thick slices starting from where you cut in the middle. Once you get to the end you can choose to keep that one of discard.

7. Lay flat on a lined/greased baking tray. Brush edges with some melted butter and sprinkle some fresh chopped parsley on top.

8. Place in the oven and cook until pastry is golden brown and puffed. Serve by themselves or with a garden salad.

     

    TIP – You can freeze, however they need to be fully cooked first and its best to flash freeze first before storing in containers/ziplock bags.
