A classic Greek Salad is a simple addition to any meal. This Greek salad can be made with or without the pasta, but adds to the filling if included. Kids love picking what they like out of this salad so it's a great choice for all ages!  - see one of my salad batch preparation vlogs here soon.

Ingredients: Serves 8 - 10

  • 200g Pitted Olives
  • 200g Cherry/Roma or simular tomatoes
  • 100g Of Greek Feta Cheese
  • 1 x Medium Green Capsicum
  • 2 x Cups Of Cucumber
  • 1/2  to 1 x Small Red Onion (choose your amount based on your liking)
  • 1 x Cup Of Spiral Pasta
  • 3 x Tablespoon's Of Olive Oil
  • 1 x Tablespoon Red Wine Vinegar
  • 1/2 Teaspoon Minced Garlic
  • 1 x Teaspoon Of Oregano

 

Method:

1. Place 1 cup of spiral pasta into a pot and boil until cooked. While that is cooking move onto the next step, but keep an eye on your pasta to ensure you do not over cook it. Once it is cooked drain and cool down in the fridge.

 

2. Dice your red onion, cucumber and green capsicum to a size of your liking. Chop your feta cheese into 1 x 2cm blocks. Put all into a bowl along with your pitted olives and mix. Put aside while you make your dressing and until your pasta is cooked and cooled down. If you think this may be a while away cover and place in the fridge to keep fresh. 

 

3. Whisk together your olive oil, red wine vinegar, minced garlic and oregano, until in blends together well.

 

4. When your pasta has cooled down add it to your diced vegetables and mix gently until your vegetables are evenly spread through. Then pour your dressing over the top and mix further.


Serve with other salads and meat of your choice.
