Another simple recipe to warm those winter bones! This Farmhouse Chicken Slow Cooker recipe is another that's great to freeze and pull out on a busy night for simple solution for the family.
Ingredients: Serves 4-6
- 1kg Chicken Breast Chunks
- 300ml Of Thickened Cream
- 2 Cups Of Chicken Stock
- 4 x Tablespoons Of Corn Flour
- 1/2 x Teaspoon Of Vegeta
- 1 x Small Onion Diced
- 2 x Cups Of Cut Beans
- 2 x Large Carrots Chunky Cut
- 1 x Cup Of Peas & Corn
Method:
1. Cook chicken and onion in a pan of approx 1-2cm of water, until just cooked. Whilst that is happening prepare your vegetables.
2. In a mixing bowl whisk together cream, chicken stock, Vegeta & corn flour.
3. Once your chicken is cooked drain any excess water. Place your chicken, onion and vegetables into either a slow cooker or large pot on your stove. Pour your liquid mixture over the top and combine well.
4. Its time to start cooking:
Slow Cooker - If cooking in a slow cooker do so on high for 4-6 hours. Stir every couple of hours.
Large Pot On Stove - Bring to the boil stirring and then reduce to the lowest simmer for 2 hours covered.
5. After cooking time, turn off heat, stir and leave to stand from 20-30 minutes to help thicken the sauce.
Serve over mash potato or steamed rice.
Tip – Freeze any excess in a sealed container for a easy reheat on a busy night.
