Winter warmer a simple family friendly vegetable soup for those cold cold days. I love making this soup in winter to serve as lunch or even just as a snack when feeling peckish. Its really my go to for a good vegetable source.
Ingredients: Serves 4 - 6
- 2 Litres Of Vegetable Stock OR MY FAVORITE make up 2pks of Continental Spring Vegetable Soup base packets !
- 1/2 Teaspoon Of Vegeta (no need for this if your using the Continental soup base mentioned above)
- 1/2 Cup Of Soup Mix Blend - Peas, Barly & Lentils
- 1 x Large Parsnip Circle Cut
- 1 x Medium Sued Large Diced
- 1 x Medium Turnip Large Diced
- 2 x Large Carrot Circle Cut
- 2 x Celary Stick Diced
Method:
1. Use a large pot with a lid for this recipe. In your large pot, bring to the boil your vegetable stock, Vegeta and soup mix blend. Once boiling turn down to a medium heat.
2. Dice/cut all of your vegetables then add to your pot. Keep on a medium heat stirring occasionally for 30 minutes, then reduce to a simmer for 1 hour.
3. Serve with a side of bread for a great filling meal.
Tip – To freeze this soup completely cool down first and either freeze as a whole or in smaller portions. To freeze as a whole, put into a sealed container in your freezer to be reheated and eaten in one sitting. To freeze in smaller portions pour into a muffin tray and freeze. Once frozen turn tray upside down running a warm cloth on the base to losen your soup. Store in a seal container or zip lock bag. To defrost get only the amount you need out and microwave on a defrost, then heat to your liking.
