With so many salads this summer being had I'm choosing simple meats to go with them. These easy Crumbed Chicken Tenders go perfectly with our salads for a main dinner meal or as a light lunch option with dipping sauces. Made with real chicken breasts these are simply delicious!
Ingredients: Serves 8 - 10
- 2 x Large Chicken Breasts (skin off or cut it off)
- 1 x Cup Of Bread Crumbs
- 3/4 Cup Of Flour
- 1/4 Cup Of Water
- 1 x Egg
- Salt & Pepper
- Vegetable Oil
- Paper Towel
- Dipping Sauce Of Your Choice.
Method:
1. In a bowl mix your flour, bread crumbs, salt & pepper. In another whisk together water with 1 egg. Put both bowls aside and do the next step.
2. Cut each chicken breast up into long tender size pieces (bigger than you would for stir fry).
2. Heat enough oil in a pan to cover the entire bottom.
3. Using long tongs dip each tender into your egg mix and then into your bread crumbs, coating as much as possible. Then place into the hot oil.
5. Cook until the underside is golden in colour and then turn. Once cooked place on paper towel on a plate to help drain excess oil and salt as needed.
Serve by them selves with your favorite dipping sauce or with a side of salad/vegetables.
Tip - You can bulk prepare tenders for many meals for the month by pre crumbing your tenders, placing into zip lock bags/sealed containers and freezing. When you need, defrost safely and cook as per instructions.
