For lunch today it's a fresh Coriander Chicken Ranch Wrap. Its fresh tasty and filling for the busy afternoon ahead. I love this for a quick and simple lunch option!
Ingredients: Serves 1
- 1 x Tortilla Wrap (or wrap of your choice)
- 1 x Cup Of Cooked Chicken (cold or warm)
- 1/3 Cup Of Ranch Dressing
- 1 x Tablespoon Of Coriander
- 1 x Handful Of Mixed Lettuce Leaves
- Shredded Cheese
- Salt & Pepper
Method:
1. Preheat a pan on a medium heat.
2. Mix together cooked chicken, coriander leaves (dice if you wish to make a little smaller), ranch dressing, salt & pepper to taste.
3. On a tortilla (or wrap of your choice) place some lettuce a little off center towards the front of the wrap (Not in the middle or your wont be able to roll easily) and then made up chicken on top. Sprinkle a little cheese. Do not put ingredients to the edges as it will spread when rolling.
4. Take the edge that has the smaller space to the ingredients, fold over your ingredients and continue to roll up tight. When you get to the end of rolling put a little cheese under the last edge that was rolled. This is to help stick it together when it starts to heat in next step.
5. Lay your wrap down flat into the pan with the last rolled edge on the bottom so teh cheese heats up first to stick. Toast the underside to your liking, then use tongs to gently turn over and toast the other side.
Remove from pan. Cut in half and enjoy!
Tip – You can have the coriander chicken ranch mix made up in advance in your fridge in a sealed container to save time the day before. If you want to batch make for a few people or a couple of days increase the recipe by doubling etc for as many serves as you need.
