Have you ever had the Gourmet Tabouli Salad from Aldi? Its devine! This cheating chef recipe takes that small premade salad tub and turns it into something that is delicious and enough to serve just with your meat dish.
Ingredients: Serves 4
- Pre-made Store Purchased Tabouli Salad
- 500g Kent Pumpkin
- 1 x Punnet Of Cherry Tomatoes
- 2 - 3 Lebanese Cucumbers
Method:
1. Preheat your oven to a temperature you would normally roast vegetables on.2. De-seed pumpkin, cut off skin and cut into approximately 3 x 3cm cubes and put into a mixing bowl.
Melt in the microwave 1-2 tablespoons of margarine/butter. Pour over your pumpkin and mix through to coat. Season with salt if you desire.
Use tongs to take each piece out of the bowl and spread out onto an oven tray. DO NOT just pour from the bowl onto the tray as you will have too much margarine/butter on the tray and they will not roast up properly. Put into the oven cooking as you normally would.
Once the pumpkin is cooked, take it out of the oven and leave on the tray to cool.
Cut lebanese cucumbers into chunky pieces. Slice cherry tomatoes in half if you desire or leave as is.
In a large bowl, gently mix together the Tabouli, tomatoes and lebanese cucumbers. Then add your pumpkin once cooled.
Serve with a side of your favorite hot or cold meat.
