Broccoli & Cauliflower Rice - Simple Vegetables

So I will admit broccoli and cauliflower are not my favorite vegetables, but I do eat at times as I know they are good for me! So I do look for different ways of eating them like last weeks recipe Broccoli & Cauliflower Bake . Today's vegetable rice is a popular dish that's starting to appear in the supermarkets recently (see my last grocery haul for premade). You can purchase premade, however it is very simple for you to make yourself if you wish :)

 

Ingredients:  Serves 4 as a side dish

  • 1 x Broccoli Head
  • 1/2 Cauliflower Head (to the size of the broccoli head you have)
  • 1 x Tablespoon of Butter or Oil (to saute)                 
  • Salt & Pepper

       

      Method:

      Making Your Cauliflower & Broccoli Rice:

      There are a few ways you can do this.

      Fine Dicing With A Knife - Cut the florets of each of your Broccoli and cauliflower. Slice them into thin slices and the dice into smaller pieces. I do it this way as I do not have a food processor.Your pieces may not be as equal in size as doing in the below ways but it works!.

      Food Processor - This is the quickest and easiest way to make your rice. Cut into florets and simply put through your processor as normal.

      Use A Grater - Use your everyday cheese grater! You will need a grater that has different grating options on it. Cut both into florets. Test on each side of your grater to decide which will work best and then simply grate! If your grater doesn't have what you think is the right size option you may need to try the 'fine dicing with a knife' option instead.

       

      Cooking Your Rice:

      1. Heat 1 tablespoon of butter or oil in a hot pan.

      2. Place your 'rice' into the pan on a high heat and toss with a spatula continuously to saute. Do this for around 5-10 minutes until you see a little toasting on the edges.

      3. Remove from teh pan straight onto your dish and serve with your choice of meats/sauces/vegetables.

       

       

      Tip – If you have children that will not eat this type of vegetables, but will eat plain rice, you can mix 1/3 x cup of your broccoli and cauliflower rice to 1 x with a cup of steamed rice to hide it a little.
