The cold weather is creeping in and I'm cooking a lot more hot vegetables dishes to go with our dinners than a lot of salads (although we still have our usual garden salad on hand of coarse! If you want to excite your vegetable choices then try this Broccoli & Cauliflower Bake for something a little different.
Ingredients: Serves 4 as a side dish
- 1 x Broccoli Head
- 1/2 Cauliflower Head
- 1 x Cup Cream
- 1 x Sour Cream
- 1 X Cup Of Grated Cheese
- Salt & Pepper
Method:
1. Preheat your over to 180c
2. Cut your broccoli and cauliflower into medium same size pieces. This is to ensure they cook evenly. Do not make them too small or they will go mushy when cooking.
3. Steam your vegetables to a 'just done' texture still a little hard. Do not over cook.
4. In a separate large mixing bowl mix together your cream, sour cream, some salt and pepper until well combined. Gently fold through your broccoli & cauliflower until well covered.
5. Place everything into a oven proof baking dish. Sprinkle grated cheese over top and place in the oven until the top is a golden brown.
Serve with a side of your desired meat & other vegetables - a nice roast meat always does well.
Tip – You can add many other vegetables, such as carrots, corn, pumpkin and potato, to this to make a vegetable bake. It's also great for batch cooking and freezing. Just double up on the ingredients and portion out into freezer safe sealed containers.
